Quick and Easy Manchego, Jamon and Fig Jam Toasts

There is nothing I love more than simple party food!
I had an impromptu tapas dinner party on Saturday night with some close friends. Creating a theme for a party is my favorite; it inspires people to get creative, gives me a reason to cook something outside the norm and ensures the favors melt at the table.
Everyone brought something to nibble or sip and before we knew it, the house was filled with laughter, music, wine and hearty conversation. This is what dinner tables were made for!

Ingredients
1 baguette, cut into 1/2 inch slices
olive oil
6 slices Jamon serrano or prosciutto
1/4 lb Manchego
Directions
1) Heat oven to 375*F
2) Brush one side of the baguette slices with olive oil; lay slices oiled side up on a baking sheet in a single layer. Bake 8-10 minutes.
3) Slice jamon into four pieces width-wise. Using a vegetable peeler, thinly slice Manchego and set aside.
4) Spread fig jam on oiled side of the toast, layer with Manchego and a piece of jamon. Serve immediately.
