Quick and Easy Lentils With Thyme and Parmesan

Bean salads are a great way to get fiber and protein without any prep work whatsoever. They become your grains and meat in one speedy dish. The extra fast way to prepare lentils (and a personal favorite) is to buy them already cooked. I usually purchase mine at Trader Joe’s, but most grocery stores will have them canned. Simply drain and rinse the lentils before adding them to just about anything at your disposal. This “salad” can be served at room temperature, as a warm side dish or cool over leafy greens.


Ingredients

  • 1 17oz  package, Trader Joe’s precooked lentils

  • 2 tablespoons freshly thyme, chopped

  • 2 tablespoons extra-virgin olive oil, plus more to taste

  • 1/4 cup fresh grated Parmigiano Reggiano, plus more to garnish

  • 1/2 shallot, finely chopped

  • salt/pepper to taste

  • A handful of diced salami (optional)


Directions

  1. Add the lentils to a microwave-safe bowl and warm for about 30 seconds. They should be warm but not hot. Add the thyme, olive oil, and grated Parmigiano to the bowl and stir to combine. Season with salt and pepper.

  2. To serve, drizzle with fruity olive oil, garnish with a handful of salami (optional), and shave Parmigiano over the top. Serve warm or at room temperature.
