Quick and Easy Smoked Salmon and Chive Goat Cheese Crostini
Servings: 4-6 as an appetizer
These crostini feel dressed up and out on the town! Goat cheese is accessorized with lemony hints from the capers and an onion zip from the chives. This nosh is sure to please any crowd.
Foodie Note: I never end up using an entire loaf of fresh artisan bread, so I cut it into large manageable pieces, store them in a sealed bag and freeze. Many times the end result is a freezer of great bread. Reheat bread in the oven for a few minutes before a meal and enjoy warm artisan bread any time of day.
Ingredients
1/2 loaf fresh baguette or other artisan bread
1/4 cup olive oil
4 oz goat cheese (let it sit out of the fridge for 10-ish minutes to soften)
1 tablespoon chives (chopped)
2 teaspoons capers (minced)
Freshly ground pepper
4oz smoked salmon or lox
chopped chives for garnish
Directions
Heat oven to 350*F.
Slice bread into 1″ pieces and set on a baking sheet.
Pour oil into a small bowl and use a pastry brush to lightly coat one side of bread with olive oil.
Bake until bread is lightly brown and crunchy, about 8 minutes.
In another small bowl, add cheese, chives and capers. Mash together using a fork. Add pepper to taste.
On the oiled side of the toasts, smear bread with goat cheese, top with smoked salmon and garnish with chives.
