Simple and Delicious Peaches and Ice Cream

Peaches and cream is Eddie’s favorite dessert of all time. I took Warm Peaches and Bleu Cheese to a bachelorette cabin trip this month and was inspired by my friend Misty. She said she remade them at home with just a sprinkling of cinnamon and sugar! Sounded wonderful. So here we are again, back in the kitchen. From Misty’s advice, I thought it was time to take Eddie’s dessert up a notch. We had an impromptu dinner party the other night and I served these for dessert. Since many of you know I don’t bake, this was an easy yet foodie treat that “WOW”ed our guests. Foodie Note:  Substitute any ripe stone fruit you like; this would be equally delectable with nectarines or apricots!

Ingredients

  • 1 ripe peach

  • 1 teaspoon agave nectar

  • 1 dash cinnamon

  • 1/4 cup vanilla gelato


Directions

  1. Cut peach in half, remove pit; set oven to broil with shelf in top 1/3 of oven.

  2. Using a pastry brush, slather cut side of peach half with agave nectar.

  3. Place peach halves face up on a baking sheet. Broil in hot oven for 4-6 minutes (keep an eye on these, they will burn easily!); you’re looking for the peach edges to be blistered.

  4. Using tongs, put cooked peach halves onto plates. Scoop your favorite vanilla gelato into the nook where the pit was, sprinkle with cinnamon and serve immediately.
