A Workin’ Girl Gourmet Snack: Raisin Bread with Brie

My goal for 2011 is to relax a little more and work a little less.  So far, not doing great with this endeavour, but I’ve made a few changes to everyday life; one of which is to pack my lunch/snack for work and not do anything while I’m eating.  Enjoy the meal and be present.  So, I’ve come up with my snack of the month that keeps my attention and is just as great for breakfast as it is for a midday nosh.   I buy Essential Baking Co. Raisin Pecan bread, which makes life worth living, in my opinion.  I don’t get it sliced so I can tear off a piece when I’m hungry.  Use whatever strikes your fancy (and/or is available).

Serves 1
1 or 2 slices raisin bread (cut about 3/4″ thick)
1 or 2 oz brie cheese

Toast bread, smear with brie and watch it melt into rich buttery goodness.  If you’re at home and have a sec, pop it into the oven on broil just to speed up the melting process, but it will only take a minute, so be careful.  Eat and savor.
