Once the weather turns cold my baking sheets are full full full of roasted vegetables. This strategy is a total life saver because they can be added to salad, folded into pasta or rice or eaten alongside your fav protein. Oh and they are SO SO delicious! I grabbed my juicing book as something new to read with Ari and was reminded of all the amazing and invigorating juices we used to make. I guess no time like the present to break out our Juiceman Jr. (thank you 1980’s) and put our produce to work. Pictured: fiery ginger, lemon, kale, celery, apple, lemon 🍋. Has anyone invented a juicer that’s easy to clean and doesn’t make a mess? A little #foodie inspo because eating well makes me feel good and feeling good makes me feel good. This is lunch from the past two days and spoiler alert - it took minutes to assemble. The trick is making a batch of caviar lentils and hard boiled eggs (which takes 30 minutes) on Sunday; then accessorize with what you have on hand.

Starting to clear the last our our tomatoes from the garden. Ari ate *slightly* dirty tomatoes fresh off the vine before I could clean them, ok - I didn’t try that hard. So autumn has started to take over our kitchen, picture #2 is roasted curry delicata and yam salad over raw garden kale with balsamic dressing and blue cheese. Salad #3 is a magical farro salad inspired from my first trip to Lucca. Farro with lemon vinaigrette with tomato and cucumber -recipe coming soon. Hope you all had a nice weekend 🧡

Tomatoes a plenty... and now the question is two f

Tomatoes a plenty... and now the question is two fold: 1)what’s for dinner? and 2) what do I do with all these tomatoes?

This dish is a super flexible summer standby that can be an appetizer or light dinner when paired with fresh fish.
Serves 2
Ingredients:
1/2 a large avocado, sliced lengthwise and scooped onto serving dish
1 pounds ripe tomatoes (any variety you’re into)
1/2 fresh baguette
1-2 tablespoons of good olive oil and thick syrupy balsamic vinegar
1/2 tablespoon fresh basil

Directions:
Fan avocado slices onto a plate, slice tomatoes to bite sized pieces, drizzle with 1-2 tablespoons vinegar and olive oil, sprinkle with basil and sea salt (extra points if you have large flake salt 🥳). Slice baguette on the diagonal and serve on the side for DIY bruschetta. #vegan #vegetarianrecipes #summervibes #crazydelicious #sosimple
