
Garbanzo Beans with Olive Oil and Truffle Salt
This salad takes literally minutes to prepare. The only caveat is that truffle salt is the real star here – visit your favorite gourmet grocery store and ask if they have truffle salt in bulk or in grocery. It’s a pricey ingredient, but goes a long way and well worth the cost. Be sure to store the salt, and all spices, in a glass jar with a tight fitting lid.
Prepare the salad at least 30 minutes in advance so the truffle can melt into the olive oil. Serve at room temperature or slightly warm.
Serves 4 as a side salad or appetizer
Ingredients:
1 15oz can garbanzo beans (preferably organic, rinsed and drained)
1 tablespoon good quality olive oil (the greener the better)
1/2 teaspoon truffle salt
1 tablespoon fresh parsley, chopped
Directions:
1) Combine garbanzo beans, olive oil and truffle salt. Let marinate for 30+ minutes.
2) Let come to room temperature, add parsley and serve.
