Simple and great as a side salad – this is perfect for a warm summer evening.
Serves 2 as a side dish:
2 cups peas (defrosted from frozen)
2 tablespoons sundried tomatoes, if packed in oil – drain, or fresh (i.e. not dried)
2 large handfuls of arugula
1 tablespoon fresh mint, chopped
1 tablespoon olive oil
1 lemon, juiced
2 tablespoons Parmesan cheese, grated
salt/pepper to taste
Combine ingredients and serve.
